I don't think you're being entirely fair. She has actually said that it's a conflicting issue for her because she has gay friends.
I'm not making a statement about christians in general here but Sherri in particular is pretty simple minded. She clings to the bible because it's what she knows. I don't think she's really prejudice against gays.

You're right, it's not fair. But she's been convinced that by voting yes on prop 8 she was protecting the rights of her pastor to not have to marry gay people, which of course was a misconception anyway. I think without that lie the vote could have easily gone the other way.
